Tuscan Kale Pesto

Last week, when I was making the kale salad, it occurred to me that this kale would make a great pesto. Using the same flavors – garlic, parmesan, lemon – I could just taste it on a batch of spaghetti, showered with more parmesan and a drizzle of great olive oil. My mouth began to water at the thought of it. Later that week, when I was going through my archive of recipes I came across a version of a black kale pesto from Nancy Oakes when she had L’Avenue in the mid-80s.
