Pimento Cheese

Pimento cheese is one of those iconic Southern foods that I grew up with, but hated early on. My mother never made it at home. Instead she bought it. It came in little jars right off the grocery shelf and was made from processed cheese. The color was clown-hair orange and the pimentos that dotted the cheese like measles tasted metallic and bitter. Nothing about it was appetizing. Even spread between two puffy white slices of Sunbeam bread, its unpleasant flavor couldn’t be disguised.
